  • 2 pieces of portobello mushrooms
  • 2 eggs

  • Julienned capsicum (½ bell pepper)
  • 2 medium-sized tomato
  • ½ cup of cilantro
  • ¼ Parmesan cheese

Method of Preparation

First crack two eggs into a nice large bowl and beat them until they're nice and creamy smooth. Add in your pinch of salt, ground pepper, milk, capsicum, and chopped up mushrooms. Fold the ingredients within the egg mix and then pour this into a deep dish non-stick pan.

Poached Chicken and Ham Salad

What You'll Need:
  • Lettuce leaves (3 large pieces, finely sliced)
  • Olive oil (1 tablespoon)
  • Cherry tomatoes (½ cup)
  • Chicken breast (1 piece)
  • 2 ham slices
  • ½ teaspoon of paprika
  • A pinch of pepper
  • Fresh olives (that have not been soaked in salty preservatives, ½ cup)
  • 2 tablespoons of non fat sour cream
  • Broccoli (½ cup, diced)

Method of Preparation:

Keep the chicken and ham on the boil before you start out with your salad bowl ingredients. Take a large bowl and drop into this your lettuce, cherry tomatoes, olives, and broccoli. Fold into this your sour cream, seasoned with black pepper and paprika.
Let the chicken breast and ham cool down to one side, before you shred the chicken and roughly chop your ham slices. Drop these into the salad bowl and again mix these up, bringing it all together with a tablespoon of the olive oil. Add more salt to taste if required.

Mozzarella Cheese Sandwich with Turkey

What You'll Need:
  • 1 medium-sized mozzarella cheese ball
  • 2 slices of turkey
  • 2 tomato slices
  • Cucumber slices (½ a cucumber)
  • A pinch of salt
  • Unsalted butter (1 teaspoon)
  • Two slices of toasted brown bread

Method of Preparation:

Lay down your first toasted bread slice with butter. Then pile atop this your two tomato slices, then one turkey slice and a couple of cucumber slices, topped off with two pieces of sliced mozzarella with the rest of the cucumber and the second toasted, buttered bread slice to finish off the ensemble.
