Easy Diabetic Desserts

A few years back life was much more difficult for diabetics in regards to eating food, especially sweet desserts. However, nowadays due to the production of sugar substitutes, there are many easy diabetic desserts, which are as tasty as the original and give you a reason to smile about.

Chocolate Mousse

Ingredients:
  • Strawberries, 3 cups (sliced)
  • Chocolate, 3 ounces (non sweetened)
  • Milk, 1 cup (low-fat)
  • Splenda, ½ cup
  • Cream, ½ cup (heavy)
  • Grand Marnier, 2 tablespoons
  • Cornstarch, 1 teaspoon
  • Any egg substitute
Procedure:
  • Mix Splenda, cornstarch, cream, egg substitute, and Grand Marnier in a bowl.
  • Heat the chocolate and milk in a saucepan on a medium flame until the chocolate melts completely.
  • Add the cream mixture into the saucepan and stir it until the mixture begins to thicken.
  • Remove from the flame and then blend it properly to get the proper texture.
  • Pour it in another bowl and refrigerate for 2-3 hrs.
  • Whip the mixture with cream and you can serve the mousse with strawberry toppings. Your dessert is ready!

Apple Pecan Upside Down Cake

Ingredients:
  • Apples, 3 (thinly sliced)
  • Flour, 1 cup
  • Pecans, ½ cup(toasted)
  • Brown sugar, ½ cup
  • Butter, ¼ cup
  • Granulated sugar or sugar substitute, ¼ cup
  • Eggs, 2
  • Cinnamon, 2 teaspoons
  • Baking powder, 1 teaspoon
  • Vanilla, 1 teaspoon
Procedure:
  • Foil a baking pan and spray nonstick cooking spray onto it. Mix flour, cinnamon, baking powder, and salt in a bowl.
  • Beat butter in a bowl with brown sugar and granulated sugar with the help of a blender. Add egg white and vanilla and continue beating. Now add the flour mixture in it. Mix properly.
  • Add the sliced apples in the baking pan and add the above mixture onto them and spread evenly.
  • Bake for 25-30 minutes. Cool the pan and invert onto a serving plate. Remove the foil carefully.
  • Serve it warm with sliced apple pieces.

Crispy Oatmeal Cookies

Ingredients:
  • Flour, 1 cup
  • Quick roll oats, 1cup
  • Butter, ½ cup
  • Brown sugar, ½ cup
  • Warm water, ¼ cup
  • Cinnamon, 1 teaspoon
  • Baking soda, ½ teaspoon
Procedure:
  • Beat the butter, sugar, and water together. Add flour to it, slowly.
  • Mix all the dry ingredients together and add to the above mixture. Keep on adding flour simultaneously.
  • Stir until the dough is stiff enough.
  • Divide the dough in 3 parts and roll each one and cut it into pieces.
  • Place the cookies on the oil greased butter sheet and bake at 350 degree F for about 10 minutes.
  • You can bake them until they are golden brown.

Diabetics Fudge

Ingredients:
  • Milk, 1 cup (low-fat)
  • Bread crumbs, ½ cup
  • Liquid sweetener, ½ cup
  • Nuts, ¼ cup
  • Cocoa, 3 tablespoons
  • Vanilla, 1 teaspoon
Procedure:
  1. Add milk and cocoa powder in a saucepan. Beat properly. Add sweetener and salt and bring it to boil.
  2. Mix the rest of the ingredients in it and cool the mixture.
  3. Make balls and roll them in the bread crumbs and serve.
